This is Caleb's mind running wild. He sits up at night thinking "What can I make into malt?" When he comes up with a grain/seed and finds a source for them he runs small test batches in his kitchen with his son and if he finds a recipe he likes we do a full batch of pale malt with it! We will also pull some of the grain into the roaster to make a chocolate version and a caramel version of the grain! We will pull a little more and make a smoked version! Once this malt runs out it is gone, so contact Caleb if you want to try some of his crazy experiments out.

For 2022 he will be malting:
-3 different varieties of corn (red, white, and green)
-Triticale
-Einkorn

Carolina Gold malted rice
This is the historic grain that built the Charleston area. A beautiful malted rice that can be used in a wide variety of beers. We also made a C30 crystal rice malt and a pale chocolate rice!

China Black Malted Rice
This is another historic rice variety originally from China. It is a deep deep purple and has a very fruity nose. It is a fun grain for beers like lagers and saison.

Bloody Butcher Corn


This is 150+ year old variety from the east coast that is a deep blood red color. This is the second year growing this corn on our farm and the beautiful red corn cobs still amaze me when I see them. The beer and whiskey I a have had from last years’ crop has been so good that I can’t wait to see what this year’s crop will make its way into! We will be selling this corn raw for distilling, malted for distilling and brewing, and through the stone mill as grits and meal for baking.  


Oaxacan Green Corn
This is a centuries old corn variety from Mexico. It was and still is used by the indigenous people there to make green Masa. It has deep green to dark turquoise kernels and is a very short stalked corn.  We malted this from a another farmer 2 years ago so this will be our first year growing it ourselves. The grain from 2 years ago went into some whiskey and several beers. I am excited to see what it will go into this year. We will be selling this corn raw for distilling, malted for distilling and brewing, and through the stone mill as grits and meal for baking.  


Boone County White Corn
This corn variety I am particularly excited about because of its history. It was bred just down the road from us in what I consider my hometown Thorntown, Indiana. It was bred in the late 1870’s. The stalks are huge and the ears are huge too. It is a fun field of corn to walk through because you almost feel like you are in some type of forest. I can’t wait to taste some whiskey, beer, and corn bread made with this corn. We will be selling this corn raw for distilling, malted for distilling and brewing, and through the stone mill as grits and meal for baking.
